These vegan oatmeal energy bites have been a quick easy go-to for our family for years. The kids love them for a quick afternoon snack, road trips, Friday treats, or even for breakfast. These tasty little oatmeal peanut butter balls are packed with fiber, nutrients, healthy fats and protein. Truly a guilt-free treat for kids with no added sugar. Just stir all the ingredients together, shape them into a ball and chill for 30 minutes.
There are also endless combo possibilities for this healthy whole food treat. You could add dates, dried fruits, or nuts. Our little chefs are big fans of the classic peanut butter and cacao combo. These energy bites are raw plant-based vegan food and great for energy!
One of the best things about this simple recipe is that it is perfect for kids to do on their own. Our kids love to whip up a batch of energy bites as a quick healthy lunch and they can do it without help! It’s only 5 ingredients!
Ingredients
- 1 cup dry oats
- 1/4 cup peanut butter
- 1/4 cup honey (vegan – coconut syrup)
- 2 tablespoons cacao powder
- 1 teaspoon cinnamon
- Pinch of salt (optional)
- 1/2 teaspoon vanilla (optional)
Instructions:
In a large bowl, add all the ingredients mentioned above.
Stir all the ingredients together until well combined.
Take a small handful of the mixture, roll them into small 1 to 2-inch size balls and place them on a baking sheet or plate.
Freeze the bites for about 30 minutes or until solid. Healthy no-bake energy bites are ready to enjoy!
Alternative: Rather than rolling them into balls, you can flatten them into a pan or baking dish, freeze, and cut into bars.
